做(zuò )法:春笋切成片后加少许盐捞出后用清水(shuǐ )浸泡,生姜切(qiē )片,葱切成段(duàn )。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒(chǎo )1分钟左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水半(bàn )掩住春笋(sǔn ),盖(gài )上锅盖大火煮开后(hòu )转(zhuǎn )中火。煮到(dào )水快熬干的时(shí )候(hòu )加入(rù )盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
