做法(fǎ ):春(chūn )笋切(qiē )成片后加(jiā )少许盐捞出后用清水(shuǐ )浸泡(pào ),生姜切片(piàn ),葱(cōng )切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再(zài )加入生抽、老抽、蚝油翻炒均(jun1 )匀,加入少量清(qīng )水半(bàn )掩住春笋,盖上(shàng )锅盖大火(huǒ )煮开后转中火。煮到水快(kuài )熬干的时候加入盐,翻炒均匀稍收汁(zhī )时盖上锅盖焖。
