做法(fǎ ):洗净宰好鲫鱼,洗净淮山(shān )和薏米。用(yòng )清水把陈皮泡软(ruǎn ),拍裂(liè )一小块姜(jiāng ),热锅,用姜块在锅上(shàng )擦一遍,放两勺油(yóu ),待油六成热下鱼,煎至(zhì )微黄(huáng )。煮沸瓦煲里的清水(shuǐ ),放入(rù )煎煮好的鲫鱼和其(qí )他材(cái )料,武火煮沸,转中小(xiǎo )火煲一个(gè )半小时,下盐调味即可品尝。
