做(zuò )法:洗净(jìng )宰(zǎi )好鲫(jì )鱼,洗净淮山和薏(yì )米。用清(qīng )水把陈皮泡软,拍裂一小块(kuài )姜,热锅,用姜(jiāng )块在(zài )锅(guō )上擦一遍,放两勺油,待油六成热下(xià )鱼,煎至微黄。煮沸瓦煲(bāo )里的清水,放入煎煮好的鲫鱼和其他(tā )材料,武(wǔ )火煮沸,转中小火煲一个半(bàn )小时,下盐调(diào )味即可品尝。
