做法:春笋切成片后加少许(xǔ )盐捞出后(hòu )用(yòng )清水浸泡,生姜切(qiē )片(piàn ),葱切(qiē )成段。锅烧热(rè ),倒入2勺(sháo )油,放(fàng )入生姜(jiāng )、春笋、牛肉片、葱段翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清水半(bàn )掩住春笋(sǔn ),盖上(shàng )锅盖大(dà )火(huǒ )煮开后转中(zhōng )火。煮到水快熬干的时候加入盐,翻炒均匀(yún )稍收汁时盖(gài )上锅盖焖。
