做法:春笋切成片(piàn )后加少许盐捞(lāo )出后用清水浸泡,生姜切片,葱(cōng )切(qiē )成(chéng )段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左右。再加(jiā )入生抽(chōu )、老抽、蚝油翻(fān )炒均匀(yún ),加入少(shǎo )量(liàng )清水半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干(gàn )的时候(hòu )加(jiā )入盐,翻炒均匀(yún )稍收汁时盖上锅(guō )盖焖。
