做法:洗净宰(zǎi )好(hǎo )鲫鱼,洗净淮山和(hé )薏米。用清水(shuǐ )把陈皮泡软(ruǎn ),拍裂一小块姜,热锅,用姜块在锅(guō )上擦(cā )一(yī )遍,放两勺油,待油六成热(rè )下鱼,煎(jiān )至微黄(huáng )。煮沸瓦煲里的清(qīng )水,放入煎煮好的鲫鱼和其(qí )他材料,武火煮沸,转中小火煲(bāo )一个半小时,下盐(yán )调(diào )味即可品尝。
