做(zuò )法:洗净宰好鲫鱼,洗净淮(huái )山和薏米。用清水把陈皮泡(pào )软,拍(pāi )裂(liè )一(yī )小块姜,热锅,用姜块在锅上擦一遍,放两勺油,待油六成热下鱼,煎至微(wēi )黄(huáng )。煮沸瓦煲里的清(qīng )水,放入煎煮(zhǔ )好的鲫(jì )鱼和其(qí )他(tā )材料,武火煮(zhǔ )沸,转中小火煲一个半(bàn )小时,下盐调(diào )味即可品尝。
