做(zuò )法:春笋切成片(piàn )后加少许(xǔ )盐(yán )捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱(cōng )段翻炒(chǎo )1分钟左右。再加入生(shēng )抽、老抽、蚝油(yóu )翻炒均匀,加入少(shǎo )量清水半掩住春(chūn )笋,盖上锅(guō )盖大火煮开后转中火。煮到(dào )水快熬干的时(shí )候加入盐,翻炒均匀稍收汁时(shí )盖上锅盖焖。
