做法:春笋切成片(piàn )后加(jiā )少许盐(yán )捞出后用清水(shuǐ )浸泡,生姜切片(piàn ),葱切成段。锅烧热(rè ),倒入2勺油(yóu ),放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加(jiā )入少(shǎo )量清(qīng )水半掩住(zhù )春笋(sǔn ),盖上锅盖大火(huǒ )煮(zhǔ )开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖(gài )上(shàng )锅盖(gài )焖。
