做(zuò )法(fǎ ):春笋切成片后加少许盐捞(lāo )出后用清水浸泡,生姜切片,葱切成段。锅(guō )烧热(rè ),倒入2勺油,放入生姜、春笋、牛(niú )肉片(piàn )、葱(cōng )段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝(háo )油翻(fān )炒均匀(yún ),加入(rù )少量清水半掩住春(chūn )笋,盖上锅(guō )盖(gài )大火煮开后转中火(huǒ )。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
