做法(fǎ ):春笋切成片后加少(shǎo )许盐捞出后用(yòng )清水浸泡,生姜切片(piàn ),葱切(qiē )成段。锅烧(shāo )热,倒入2勺油(yóu ),放入生姜、春笋、牛肉片(piàn )、葱(cōng )段(duàn )翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻炒均(jun1 )匀,加入少量清水半掩住春(chūn )笋,盖上锅(guō )盖(gài )大(dà )火煮(zhǔ )开后(hòu )转(zhuǎn )中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
