做法:春笋切成(chéng )片后加少许盐捞出后用(yòng )清(qīng )水浸泡(pào ),生姜切片,葱切成段。锅(guō )烧热,倒入(rù )2勺油,放(fàng )入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽(chōu )、蚝(háo )油翻炒均匀(yún ),加入少量清水半掩住春笋,盖(gài )上锅(guō )盖大火煮开后转中火(huǒ )。煮到水快熬干的时(shí )候加入盐,翻炒均匀稍收汁(zhī )时盖(gài )上锅盖(gài )焖。
