做法:洗(xǐ )净宰好鲫鱼,洗净(jìng )淮山和薏米。用(yòng )清(qīng )水把(bǎ )陈皮泡软,拍裂(liè )一小块姜,热锅,用姜块在(zài )锅(guō )上擦一(yī )遍,放两勺(sháo )油,待油六成热下鱼,煎至微(wēi )黄。煮沸瓦煲里的清水,放(fàng )入煎煮好(hǎo )的鲫鱼和其他材料,武火煮沸,转(zhuǎn )中(zhōng )小火煲(bāo )一个半(bàn )小时,下盐调味即可品尝。
