做法(fǎ ):洗净宰好鲫鱼,洗净淮(huái )山和薏米。用清水把陈皮泡软,拍(pāi )裂(liè )一小块姜,热锅,用(yòng )姜块在锅上擦一遍,放两勺(sháo )油,待油六成热(rè )下鱼,煎(jiān )至微(wēi )黄。煮沸瓦煲里(lǐ )的清水,放(fàng )入煎煮好的鲫鱼(yú )和其他材料,武火煮沸,转中小火煲一个半小(xiǎo )时(shí ),下盐调(diào )味即可品尝。
