做法:春笋切成片(piàn )后加少许盐捞出后用(yòng )清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝(háo )油翻(fān )炒均匀,加入少量清水半掩住春笋,盖上(shàng )锅盖大火煮开(kāi )后转中(zhōng )火。煮到(dào )水(shuǐ )快熬干(gàn )的时候加入(rù )盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖(mèn )。
