做(zuò )法:春(chūn )笋切成(chéng )片(piàn )后加(jiā )少(shǎo )许盐捞出后用(yòng )清(qīng )水浸泡,生姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加入(rù )少量清水半掩(yǎn )住(zhù )春笋,盖上(shàng )锅盖大火煮开后转(zhuǎn )中火(huǒ )。煮(zhǔ )到水快熬干的(de )时候加入盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。
