做(zuò )法:春(chūn )笋切成片后加少许盐(yán )捞出后(hòu )用清(qīng )水浸(jìn )泡,生姜(jiāng )切片,葱切成段。锅(guō )烧热,倒入2勺油(yóu ),放(fàng )入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋(sǔn ),盖上锅盖大火煮开后转中火。煮到(dào )水快熬干(gàn )的时(shí )候加入盐,翻炒均匀稍收汁时盖(gài )上(shàng )锅盖焖。
