做法:春笋切成片后(hòu )加少许(xǔ )盐捞出后用清水浸(jìn )泡,生(shēng )姜切片,葱切成段。锅(guō )烧热,倒入(rù )2勺(sháo )油,放(fàng )入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住春笋(sǔn ),盖上锅盖大火煮开后(hòu )转中(zhōng )火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。
