做法:洗(xǐ )净宰好鲫鱼(yú ),洗净淮山(shān )和薏(yì )米。用(yòng )清(qīng )水把陈皮泡软,拍裂(liè )一小块姜,热锅,用姜块在锅上擦一遍(biàn ),放(fàng )两勺(sháo )油,待油六成热下鱼(yú ),煎至微黄。煮沸瓦煲(bāo )里的(de )清水(shuǐ ),放入煎煮好的鲫(jì )鱼和其他材(cái )料,武火煮沸,转中小(xiǎo )火煲一个半小时,下盐(yán )调味即可品尝。
