做法(fǎ ):春笋切成(chéng )片后加少(shǎo )许盐(yán )捞出后用清水浸泡,生姜切(qiē )片,葱(cōng )切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻(fān )炒均匀,加入少量清水半(bàn )掩(yǎn )住春笋,盖上锅盖大火煮(zhǔ )开后转中火。煮(zhǔ )到(dào )水快熬干的时候加入(rù )盐,翻(fān )炒均匀稍收汁时盖(gài )上锅盖(gài )焖。
