做法:春(chūn )笋切成(chéng )片(piàn )后加少许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝(háo )油翻炒均匀,加入少量(liàng )清水半掩住春笋,盖上(shàng )锅盖大火(huǒ )煮开(kāi )后转(zhuǎn )中(zhōng )火。煮到水(shuǐ )快熬(áo )干的时候加入盐(yán ),翻炒均匀稍(shāo )收汁(zhī )时盖上锅盖(gài )焖。
