做(zuò )法:洗(xǐ )净宰好鲫鱼(yú ),洗净淮山和薏米。用清水把陈皮泡软,拍裂一小块姜(jiāng ),热锅,用姜块在锅上擦一遍,放(fàng )两勺(sháo )油,待油六成热下鱼,煎(jiān )至微黄。煮沸瓦煲里的清(qīng )水,放入煎煮(zhǔ )好的鲫(jì )鱼和(hé )其他(tā )材料,武火煮沸,转中(zhōng )小火煲一个(gè )半小(xiǎo )时,下盐调味即可品尝。
