做法:春笋切成片(piàn )后(hòu )加(jiā )少许盐捞出后用清水浸泡,生姜切片(piàn ),葱切成段(duàn )。锅(guō )烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉(ròu )片、葱段翻炒(chǎo )1分钟左(zuǒ )右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水(shuǐ )半掩住春笋(sǔn ),盖上(shàng )锅盖大火煮开后转中火(huǒ )。煮(zhǔ )到水(shuǐ )快熬干的时候加入盐,翻炒均匀(yún )稍收汁时盖上锅盖焖(mèn )。
