做法:春(chūn )笋(sǔn )切成片后加少许盐捞出(chū )后(hòu )用清水浸泡,生(shēng )姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油(yóu )翻(fān )炒(chǎo )均匀,加入少量清水半掩住春笋,盖上(shàng )锅盖大火(huǒ )煮(zhǔ )开后转中火。煮到(dào )水快熬干的时(shí )候加入(rù )盐(yán ),翻炒均匀稍收汁时盖上锅盖焖。
