做(zuò )法:洗(xǐ )净宰好鲫鱼,洗(xǐ )净淮山和薏米。用清水把陈(chén )皮泡软,拍(pāi )裂一小块姜,热(rè )锅,用姜(jiāng )块在锅上擦(cā )一(yī )遍,放两勺(sháo )油,待油六成热下鱼,煎至(zhì )微黄。煮沸瓦煲里的清水,放入煎煮(zhǔ )好的鲫(jì )鱼和其他(tā )材(cái )料(liào ),武火煮沸,转中小(xiǎo )火煲一个半(bàn )小时,下盐调味即可品尝。
