做法:春笋切成片后加少许盐(yán )捞出后用(yòng )清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入(rù )生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝油(yóu )翻(fān )炒均匀(yún ),加(jiā )入少量(liàng )清水半掩(yǎn )住春笋,盖(gài )上(shàng )锅盖大(dà )火(huǒ )煮开后转中火。煮到水(shuǐ )快熬干(gàn )的(de )时候加入盐,翻炒(chǎo )均匀(yún )稍收汁时盖上锅盖焖。
