做法:春笋切成片后加(jiā )少(shǎo )许盐捞出后用(yòng )清水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒(dǎo )入(rù )2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再加(jiā )入生(shēng )抽、老抽、蚝(háo )油翻(fān )炒均匀,加入(rù )少量清水半掩住春笋,盖(gài )上锅盖大(dà )火煮开后转中火。煮(zhǔ )到水快熬干(gàn )的时候加入(rù )盐,翻炒均匀稍收汁时盖(gài )上(shàng )锅盖焖。
