做法:春笋(sǔn )切(qiē )成(chéng )片后加少许盐捞(lāo )出后用清水(shuǐ )浸泡(pào ),生(shēng )姜切片,葱切成段(duàn )。锅烧(shāo )热,倒入2勺油,放(fàng )入生(shēng )姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住(zhù )春笋,盖(gài )上锅盖大火煮(zhǔ )开后转(zhuǎn )中火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖。
