做(zuò )法:春(chūn )笋切成片(piàn )后加少许(xǔ )盐捞出后用清水浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺(sháo )油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分(fèn )钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅(guō )盖大(dà )火煮开后转中(zhōng )火。煮到水(shuǐ )快熬干的时候加入(rù )盐,翻炒均匀稍收(shōu )汁时盖上(shàng )锅(guō )盖焖。
