做法(fǎ ):春笋(sǔn )切成片后加少(shǎo )许盐捞出后用清水浸泡,生姜切片(piàn ),葱(cōng )切成段。锅(guō )烧热(rè ),倒入(rù )2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒(chǎo )均(jun1 )匀,加入少量清水半掩住春笋,盖上锅盖大(dà )火(huǒ )煮开后转中火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均匀(yún )稍收汁(zhī )时盖(gài )上(shàng )锅盖焖。
