做(zuò )法(fǎ ):春(chūn )笋切成片后加少许(xǔ )盐捞出后用清水浸泡,生姜(jiāng )切(qiē )片,葱切成段。锅(guō )烧热,倒入2勺(sháo )油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水半掩住(zhù )春笋,盖上锅盖大火煮开后转中(zhōng )火。煮到水快熬干的时候加(jiā )入(rù )盐,翻炒均匀稍收汁时盖(gài )上(shàng )锅(guō )盖焖。
