做(zuò )法(fǎ ):春笋切(qiē )成片后加少(shǎo )许盐捞出后用清水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入生抽(chōu )、老抽、蚝油翻(fān )炒均匀,加入少量清水半(bàn )掩住春笋,盖上(shàng )锅盖大火煮开(kāi )后转中火。煮到水快熬干(gàn )的时候加入盐,翻炒均匀(yún )稍(shāo )收汁时盖上(shàng )锅(guō )盖焖。
