做法:春笋切成(chéng )片后加(jiā )少许盐捞出(chū )后用(yòng )清水(shuǐ )浸(jìn )泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放(fàng )入生姜、春笋(sǔn )、牛肉(ròu )片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少(shǎo )量清水半掩住春笋,盖上锅盖(gài )大火煮(zhǔ )开(kāi )后转中火。煮到水快熬干的时候加入(rù )盐,翻炒均匀稍收(shōu )汁时(shí )盖上锅盖焖。
