做法:春笋切成片后加少许(xǔ )盐捞出后用(yòng )清水浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻(fān )炒1分(fèn )钟左(zuǒ )右。再加入生抽(chōu )、老抽、蚝油翻炒均匀(yún ),加(jiā )入少量清水半掩住春笋,盖上锅盖大(dà )火煮开后转中火。煮到(dào )水快熬干的时候加入盐,翻炒(chǎo )均匀稍收(shōu )汁时(shí )盖上锅(guō )盖焖。
