做法(fǎ ):春(chūn )笋切成片后加(jiā )少(shǎo )许盐(yán )捞出后用清水(shuǐ )浸泡,生姜切片,葱切(qiē )成段。锅烧热(rè ),倒入(rù )2勺油,放入生姜、春(chūn )笋、牛肉片(piàn )、葱段翻炒1分(fèn )钟左右。再加入生抽、老(lǎo )抽(chōu )、蚝油翻炒均匀(yún ),加入(rù )少(shǎo )量清水半掩住春笋(sǔn ),盖上锅盖大火煮开后转中火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
