做法:洗净宰好鲫鱼,洗净淮山(shān )和薏米(mǐ )。用清水把(bǎ )陈皮泡软(ruǎn ),拍裂一小块姜(jiāng ),热锅,用姜块在(zài )锅(guō )上擦(cā )一遍,放两勺(sháo )油,待油六成热下鱼,煎至(zhì )微黄(huáng )。煮沸瓦煲里的清水,放入煎煮好的鲫鱼(yú )和其(qí )他材料,武火(huǒ )煮沸,转中(zhōng )小(xiǎo )火煲一(yī )个半小时,下盐调味即可品(pǐn )尝。
