做法:春笋切成片(piàn )后加少许(xǔ )盐捞出后用清(qīng )水浸泡,生姜切片,葱切(qiē )成段。锅烧热,倒入2勺(sháo )油,放入生(shēng )姜、春笋、牛肉片、葱段翻炒1分(fèn )钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清(qīng )水半掩(yǎn )住春笋,盖(gài )上(shàng )锅盖大火煮(zhǔ )开后转(zhuǎn )中火。煮(zhǔ )到(dào )水快熬干的时候加入盐(yán ),翻炒均匀(yún )稍收(shōu )汁时盖上锅盖焖(mèn )。
