做法(fǎ ):春笋切成片后加少许盐捞(lāo )出后用清水浸泡,生(shēng )姜切片(piàn ),葱切成段。锅烧(shāo )热,倒(dǎo )入2勺(sháo )油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒(chǎo )1分(fèn )钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春(chūn )笋,盖(gài )上锅盖大(dà )火煮(zhǔ )开后转(zhuǎn )中(zhōng )火。煮到(dào )水快熬干的时候加入盐,翻炒均匀(yún )稍收汁时盖上锅盖焖。
