做(zuò )法:洗净宰好(hǎo )鲫(jì )鱼,洗净淮山和薏(yì )米。用清水(shuǐ )把陈皮(pí )泡软,拍裂一小块姜,热(rè )锅(guō ),用姜(jiāng )块在锅上擦一遍,放两勺油,待油六成热下鱼,煎至微黄(huáng )。煮沸瓦煲里的清水,放入煎煮好的鲫鱼和(hé )其他材料,武火煮沸,转中小(xiǎo )火煲(bāo )一(yī )个半小时,下盐调(diào )味(wèi )即可品尝。
