做(zuò )法:春笋切成片后加少许盐(yán )捞出后用清水浸泡(pào ),生姜(jiāng )切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再(zài )加入生(shēng )抽、老(lǎo )抽、蚝油翻(fān )炒均匀(yún ),加入少量清水半掩住春笋,盖上锅(guō )盖大火煮开后转中火。煮到水快熬干的(de )时候加(jiā )入(rù )盐,翻炒均匀稍(shāo )收汁时(shí )盖(gài )上锅盖焖。
