做(zuò )法(fǎ ):春笋切成(chéng )片(piàn )后加少许盐(yán )捞出后(hòu )用清水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻(fān )炒1分钟(zhōng )左右。再(zài )加入(rù )生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水半掩住春(chūn )笋(sǔn ),盖上锅盖大火煮开后转中火。煮到水快熬干的时(shí )候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖。
