做法:春(chūn )笋切成(chéng )片后加(jiā )少许盐捞出(chū )后用清水浸泡,生姜切片,葱切(qiē )成(chéng )段(duàn )。锅烧热,倒入2勺油(yóu ),放入生姜、春笋、牛肉片(piàn )、葱段(duàn )翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清(qīng )水半掩(yǎn )住春笋,盖上锅盖大火煮开(kāi )后转(zhuǎn )中火。煮到水快熬干的时候加入(rù )盐,翻炒均匀(yún )稍收汁(zhī )时盖上锅盖焖。
