做(zuò )法:春笋切成片后(hòu )加少许盐捞出后用清水浸泡,生姜(jiāng )切片(piàn ),葱(cōng )切成段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽(chōu )、蚝油翻炒均(jun1 )匀,加入少量清水(shuǐ )半掩住(zhù )春笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快熬(áo )干的时候加入(rù )盐,翻(fān )炒均匀稍收汁时盖上(shàng )锅盖焖。
