做法:洗净宰好鲫鱼,洗净淮山和薏米。用清水把陈皮(pí )泡软,拍裂(liè )一小(xiǎo )块姜,热锅(guō ),用姜块在(zài )锅上(shàng )擦(cā )一遍,放两勺油(yóu ),待油六成热下鱼,煎至微黄。煮沸瓦(wǎ )煲里的清水(shuǐ ),放入煎煮好的鲫鱼(yú )和(hé )其他(tā )材料,武火煮沸,转中小火煲一个半(bàn )小时,下盐(yán )调(diào )味即可(kě )品尝。
