做法:洗净宰(zǎi )好鲫鱼,洗净淮山和薏米。用清水把陈皮(pí )泡软,拍裂一小块姜,热锅,用姜块(kuài )在锅上擦一遍,放两勺(sháo )油,待油六成热(rè )下(xià )鱼,煎(jiān )至微黄(huáng )。煮沸瓦煲里的清水,放入(rù )煎煮好的鲫(jì )鱼和其他(tā )材料,武火煮沸,转中小火煲一个半小(xiǎo )时(shí ),下(xià )盐(yán )调味即可品(pǐn )尝。
