做(zuò )法:春(chūn )笋切成片(piàn )后加(jiā )少许盐捞出后(hòu )用清水浸泡(pào ),生姜切片,葱(cōng )切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片(piàn )、葱段翻炒1分钟(zhōng )左右。再(zài )加入生抽、老抽、蚝油翻炒均(jun1 )匀,加入少量清水半掩住(zhù )春(chūn )笋,盖(gài )上锅盖大火煮开后转中火。煮(zhǔ )到水(shuǐ )快熬干的时(shí )候加入盐,翻炒均匀稍收(shōu )汁(zhī )时盖上锅盖焖。
