做法:春笋切成(chéng )片后加少许(xǔ )盐捞出后用清水(shuǐ )浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟(zhōng )左(zuǒ )右。再(zài )加入(rù )生(shēng )抽、老抽、蚝油翻(fān )炒(chǎo )均匀,加入少量清水半掩住春笋,盖上锅盖大火煮开后转中(zhōng )火。煮到水快熬干的时(shí )候加(jiā )入盐,翻炒(chǎo )均匀稍收汁时盖上(shàng )锅盖(gài )焖。
