做法(fǎ ):洗(xǐ )净(jìng )宰好(hǎo )鲫(jì )鱼(yú ),洗净(jìng )淮(huái )山和(hé )薏米。用清水把(bǎ )陈皮泡软,拍裂一小块姜(jiāng ),热锅(guō ),用姜块在锅上擦一遍,放两勺油,待油六成热下鱼,煎至微黄。煮沸瓦煲(bāo )里的清水,放入煎煮好的鲫鱼(yú )和其他材(cái )料,武火煮沸,转中小(xiǎo )火煲一个半(bàn )小时(shí ),下盐调味即可品尝。
