做法:春笋切成片后加少许(xǔ )盐捞出(chū )后用清水浸泡,生姜切片,葱(cōng )切成段(duàn )。锅烧热,倒入2勺(sháo )油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩(yǎn )住(zhù )春笋,盖上锅盖大火煮开后转(zhuǎn )中火。煮到水快熬干的时候加入盐,翻炒均匀(yún )稍(shāo )收(shōu )汁时盖上(shàng )锅盖(gài )焖。
